Broccoli & Burrata Recipe

This broccoli and burrata recipe is a super tasty and super easy to make vegetarian side dish. Loaded with broccoli, fine green beans, seeds, lemon, and burrata, it’s a great accompaniment to any main and only takes 15-20 minutes to make.

Serves: 4 (as a side)


Ingredients

  • Broccoli stems - 300g

  • Fine beans - 300g

  • Lemon - 1 (unwaxed)

  • Mixed seeds - 100g

  • Garlic paste - 1 tsp (or 2 cloves finely chopped)

  • Olive Oil - 4 tbsp (plus some for cooking)

  • Burrata - 1 ball (c.100g)

  • Salt & pepper


Method

broccoli & burrata Step One - Blanch Your Broccoli

Add to a pan the broccoli and zest of the lemon. Then add a dollop of olive oil, a little salt and pepper, and half a cup of water (or enough to line the bottom of the pan to steam the broccoli rather then frying it).

Put a lid on the pan and place on a low-Medium heat to start to gently steam the broccoli.

About 5-7 minutes into the broccoli cooking, add the fine beans, put the lid back on and continue cooking for a few more minute until the vegetables are al dente, to taste (add more water at this stage if the previous water has evaporated - you don’t want it to dry out).

Get going with step two whilst the broccoli’s cooking.

 

broccoli & burrata Step Two - Roasted Garlic Seeds

Whilst the broccoli’s cooking. In a separate pan add the seeds, a little salt and oil, and the garlic paste.

Place the pan on a very low heat, stirring often, and keep an eye on it. The garlic will try to burn if left too long or if the heat is too high. If that happens, it’ll taint the seeds with a bitter taste and you’ll need to start again.

As soon as the seeds take on a little colour (which should only be a few minutes), take off the heat and set aside.

Once the broccoli and beans are cooked (but still with a little bite to them), take them off the heat at start to arrange in a serving bowl.

Then final step is to rip up the burrata and place chunks on top.

Squeeze the lemon juice over everything, then the olive oil, then the seeds, and finally a little seasoning.
