Slow Cooked Lamb Chop Recipe

This lamb chop recipe gently cooks the lamb over 3 hours, to get the perfect texture and flavour. Easy to make, it’s make a meal that’s guaranteed to impress. I use a sous-vide machine but you don’t need to have one, you can use an oven instead.

Ingredients

  • Lamb Chops - 4

  • Garlic - 2 cloves

  • Spring Onions - 2

  • Dijon Mustard - 2 tsp

  • Wholegrain Mustard - 2 tsp

  • Dried Rosemary - 1 tsp (or 2 sprigs)

  • Thyme - 4 sprigs

  • Onion - 1

  • Gravy Granules - 2 tbsp

Method

Lamb Chops Step One - Packaged Lamb

If you have a vacuum sealer, separate equally into 2 bags the: lamb chops, sliced garlic, chopped spring onion, mustard, rosemary, thyme, and a little seasoning.

If you don’t have a sous-vide machine, place the ingredients in foil and seal the foil into a package (like a foil Cornish Pasty).

 

Lamb Chops Step Two - Slow Cook

Set the sous vide somewhere between; 55°C / 130°F for medium rare to 62°C / 144°F for well done and place the bags in the water bath for about 3 hours.

For oven cooking set the oven temperature to 150°C and follow the same process; cooking for 3 hours.

 

Lamb Chops STEP Three - Onions

About 2 hours into the lamb cooking, thinly slice the onion and add to a pan with a little oil, thyme, and seasoning.

Cook the onions on the lowest heat, turning occasionally, until they soften and brown. Its best if you do this slowly over a long period; the slower they cook, the sweeter they’ll be.

Once they’re cooked, take off the heat, as you can warm them back up again when you’re ready to serve.

 

Lamb Chops STEP Four - Stock

Take the lamb out of the water bath / oven.

Pour about half a pint of water into a pan, also pour in the contents of the lamb parcels.

Wash the lamb in the water to remove any debris, then transfer to a board and cover in foil.

 

Lamb Chops STEP Five - Gravy

Bring the pan of water to the boil, add the gravy powder, and stir through.

Strain the gravy, return the liquid back to the pan, and place on a gentle simmer.

Also start to reheat the onions you cooked earlier.

 

 

Lamb Chops STEP SIX - Browned Lamb

Heat some butter or oil in a frying pan on a high heat, add the lamb chops.

Cook for a couple of minutes on each side, until sufficiently browned.

Remove from the heat and rest for 2-3 minutes.

Serve the lamb on a bed of the onions and top with the gravy.
