Vietnamese Spring Roll Recipe

Looking for a healthy starter for your dinner party? Look no further! These delicious spring rolls are super simple to make, you can make them with pretty much any veg, and they can be made in advance. Once you’ve learnt how to make them, there’s no gong back!

Ingredients

  • Rice Paper / Spring Roll Wrappers - 8 to 12

  • Vermicelli Noodles - 100g

  • King Prawns - 200g

  • Mint - a bunch

  • Coriander - a bunch

  • Shredded Vegetables (anything from spring onions, lettuce, carrots, red cabbage, cucumber, etc) - handful of each

  • (Optional) Edible Flowers if you can get them

  • Dipping Sauce - to serve

Method

Spring Rolls Step One - Perpping

Shred all the veg: chop the herbs, spring onions, cucumber etc. and grate the harder veg (carrots, red cabbage, etc.)

Cook the vermicelli noodles by placing them in a pan of boiling water, placing a lid on the pan and turning off the heat. Leave to cook in the hot water for 5 minutes, then strain off the excess water.

Cook the prawns if they’re frozen.

 

Spring Rolls Step Two - Rice Paper

To start making the spring rolls, place a sheet of rice paper in hot water for about 10 seconds until it’s pliable.

 

Spring Rolls Step THree - Filling

Place the herb, vermicelli, and raw veg in a roll at the top of the rice paper.

Then place the more decorative items in a row just below the veg / vermicelli mix e.g. prawns, flowers, or mint leaves. (as this will be the part that shows through the paper).

 

Spring rolls Step Four - I fold…

Fold over the top of the rice paper over on top of the veg / vermicelli mix, then the sides to seal it all in.

Then roll the whole thing towards you to make the spring roll.

You should find the placement of the prawns ends up with it on top of the spring roll, if not, just slightly adjust the placement on the next roll.

 

Spring Rolls Step Five - Vietnamese SPring Rolls

Once you’ve finished all the spring rolls, serve with a dipping sauce.
